How much would either a family or M&A lawyer make working in Edinburgh and how do law degrees work?

I'm hoping to become a lawyer, either family or M&A, and I was wondering how much they would make in Edinburgh, probably working 9 to 5 and taking off weekends, or just any average wage would do. Also, do you choose what type of law to study when you are at university or is law just a single degree?
